The rewards are either magic upgrades, or items like the fairy sword - not really necessary at all to complete the game, but still neat rewards.
Don't try to go for the 15 fairies the first time you do a temple, leave that for later in case you want to 100% it.

Back in the year 2000, "typical" Zelda wasn't very stablished, MM was only the 2nd 3D Zelda. And it introduced a lot of new things unique to it such as mask transformations, the time-reset mechanic/time manipulation and an emphasis on sidequests/NPC schedules more than dungeons and the main quest.
