There's regular animal looking pokemon in gen 3 like Mightyena, Linoone, Swellow, Pelipper, the Slaking line, etc

Gen 1 also had pokemon that, if they came out now, people would say they're "overdesigned" and weird like Golduck, Magmar, Electabuzz, Omastar, Kabutops, Golem, Hitmonchan, etc

The art style changed a bit, but that's more to do with the change in technology allowing more detailed sprites

That's nostalgia talking. You're just not as familiar with them. People who didn't play pokemon even in gen 1 look at gen 1 pokemon the same way.
