The Schthak server or something are private servers that still run today, now that the official servers have been shut down. The Gamecube versions are a significant improvement on the DC version and hold a great deal of new content and features. You can even acquire a Tails Chao to transfer to the Sonic Adventure games with a GBA.

PSO had another game on the console, Ep.III C.A.R.D. Revolution. It's a sequel with a drastically different genre from the PSO mainstay, but it's a nice playthrough if the turn-based gameplay appeals to you. I remember the online lobbies being connected to the Ep. I&II ones, so you could chat and play soccer with other folks from this game to that game and even play SFX you couldn't play in Ep. I&II to confuse the hell out of people.

That's what makes the Gamecube PSO experience very lively, it connects nicely to other games and offers fresh content. While you might come across glitches online, online play on the DC version suffered very horribly from hack abuse. Of course, it's pretty much outdated with what you can find nowadays, but it's a very charming and novel experience.
