Also the character voices may be influencing who you like/dislike. I can't stand the voices for Trode, Medea or Marcello so I turned voices off. And then I found I like pretty much every character when I wasn't being influenced by their voice (including Medea becoming my favorite girl in the series).

Playing all the games in release order.

If you're asking for one game which I consider the pinnacle of what Dragon Quest did well, it would be Dragon Quest VIII. Only thing it lacks from the other games is parcheesi and classes.
