That's why you get an AV Famicom.

I just bought an AV Famicom and the AV cable it comes with is only yellow and white (composite video and mono audio).
I noticed some people use Super NES/Nintendo 64/GameCube composite cables with yellow, white and red (composite video and stereo audio) but does it actually provide fake stereo/dual mono audio?
Or does the audio only come out of the left channel?

If so, what's better for getting dual mono out of the AV Famicom? Using an RCA mono to stereo Y splitter for the mono cable that came with my purchase, or getting a Super NES composite + stereo cable?

Your best bet is the model 2 Famicom. Solid build design, comparable to a top loader NES, but with composite AV out, shouldnt be any compatability issues either. I'd recommend the Sharp Twin Famicom but the disk drive is just to unreliable.

Does the AV Famicom not support S-Video?

I'd like opinions as to which is better: AV Famicom + FDS or Twin Famicom.

I see pros and cons to both, but I'd like to know what you guys think.
