Sure do, it's the best Eva video game.
By the way pic related is a somewhat underrated experience. Not a game per-se but it's, as the title suggests, a digital card collection, there are mini-games you have to play in order to add cards to your folders though. Some of the mini-games are Eva CD-ROM for windows-tier mini-games, very simple stuff, but some others are more interesting and fun, the magma diver one is my favorite.
Recommended for Eva fans, also has some exclusive bonus content that I don't think was ever published or released anywhere else outside this game.

Well, as far as I know, the answer is No to both.
For Iron Maiden you're better off with the original PC version anyway, which is sure to not have any censorship.
For other games, Evangelion 64 can be played without reading japanese. Maybe just check up a FAQ online for the controls in certain missions, but it's still easy to figure out.
Digital Card Library on Sega Saturn is also playable without knowing japanese (it's a collection of mini-games and a lot of multimedia goodies)
