Well, her and lemmy have their own whack-a-mole type thing, but the only ones who really do long cycles of invincibility are Ludwig and Bowser.
Iggy, Morton, Roy and Larry you can kill them quickly if you time your hits well. Watch any speedrun.

I actually discovered that you can kill SMW's bosses with fireballs too. Killed Morton Jr. the other day without the walls closing in, blew my mind. Not even kidding, I knew about killing bowser with fireballs on SMB1, but never tried it on SMW's bosses.
