Darkstalker's animation is kind of an unfair comparison since its animation had way more focus then most game's. The animation for the series had alot of work put into it specifically because it was suppose to present what a major leap from SFII it was. While Capcom made better sprites as technology advanced they never quite went as all out in animation as they did with Darkstalkers.

Darkstalkers is westaboo as fuck. The characters are based on Hollywood archetypes, their designs are inspired by American superhero comics, and the animators cited Disney and Tom & Jerry as reference for the animation.

There are a lot of reasons the series is dead. Capcom taking a decade-long hiatus from the fighting game genre, the industry focusing on fewer, higher-selling IPs (a trend which happened to accelerate quickly during that same decade), demographic changes in the market (Japan becoming a tiny fraction of the market share it once was; back then something could be popular only in Japan and still make a lot of money, but the aforementioned focus on fewer, high-selling IPs and bigger and bigger numbers being at stake means it's more important than ever to tap into established fanbases, and Darkstalkers' only established fanabase is now an aging, irrelevantly small part of the market), video game graphics shifting in a direction incompatible with the series' aesthetic (pretty much everything Darkstalkers does would be a pain to do in polygons, and those visuals were half of what made the series popular in the first place), and so on and so forth.

If you can, get the Japanese PS2 Darkstalkers Collection. It has every game in the series plus extras.

The two best games in the series are generally considered to be Night Warriors: Darkstalkers' Revenge (aka Vampire Hunter: Darkstalkers' Revenge in Japan), which is the second game in the series, and Vampire Savior: The Lord of Vampire (aka Darkstalkers 3 in some international ports), which is the third game in the series.

The first game (Darkstalkers: The Night Warriors, or Vampire: The Night Warriors in Japan) might be worth playing a few times for curiosity's sake and the see the series' roots, but not for much else.

Vampire Savior 2 And Vampire Hunter 2 are bad updates of the third game in and aren't worth playing. Basically avoid anything with a "2" in the title.

Vampire Chronicle (Dreamcast)/Darkstalkers Chronicle: The Chaos Tower (PSP) is a weird sort of mashup that is kind of like Hyper Street Fighter II but way less accurate and with a lot of content missing. It tries to jam the entire series in one game, but does a bad job of doing so. Not recommended.

The Darkstalkers Resurrection bundle that was released on PSN and XBL last is comprised of online play-enabled versions of the two aforementioned best games in the series.

>Not to mention the animation style is hardly "anime". It closer resembles western cartoons in motion, with its exaggerated and slapstick animation frames.
The first thing out of lots of Japanese players' mouths when they first saw Darkstalkers in action back in 1994 was "Holy shit, it's like a Disney cartoon!" Famous fighting game player Sako has even gone on the record as saying that was his first impression back then.
