All games supported by the Expansion Pak have better graphics and run smoother.

Some games provide in-game video settings that take advantage of the xpac, others don't but still take advantage of the pak.

Only a few games require the pak to run. If you're interested in a N64, its generally recommended if not expected of you that you pick up a Expansion pak. Just do it, they're cheap and you get a lot of it.

That right there from my experience, is pretty accurate.

Does Genesis benefit more? Hell yes. Is there a noticeable difference between S-Video and RGB on SNES? Hell yes. Is there any reason why S-Video isn't a viable option? Hell no, it is plenty viable. But if you want that extra kick you can certainly get it.
