I have only read a little Elric and none of the Witcher, but the thing about reading Elric that surprised me was how it felt like a tragedy. Elric has all this power, magic, knowledge, allies etc but no good ever comes of it, in fact, most of Elrics fuckups are self-inflicted despite all the chances he has to make the right choices.

There is a collection of the original 7 or so short stories and novel. That's a good start.
Moorcock later reworked them and some other stories into a series of paper-backs which is where everyone really got to know Elric. In those Elric swings between happy and morose depending on when that story was published beforehand or made for the books.

The Cornelius books are pretty good as well, though somehow more trippy because they supposedly take place in 60s London.

Now the real rabbit hole is the Eternal Champion Series. Which squelches to an unsatisfactory end as the final third of a separate book series.
Moorcock then later wrote a bunch of longer books which actually wrap up the plots from his different well-known series and reveal how all the characters connect via the Von Bek family.

The Eternal Champion stuff is nutty. I have a distinct recollection of a scene where Elric is sitting with another incarnation of himself in the back of, if I'm remembering correctly, a time-traveling gyrocopter, and the man says to Elric that his destiny is dark and doom-laden, to which Elric replies that it is not as dark and doom-laden as his own destiny. My primary emotional state reading those could be described as "amused confusion".

I recommend Stormbringer and the surrounding stories to basically everyone who has ever been to /tg/ though, in addition to being a kickass read it's worth reading just to see the clear influence it had on D&D.

There are two races, the Eldren (created by Law) and the Mabden (created by Chaos, though how they intersect with regular humans is an untouched point).
The Eldren scatter throughout the multiverse, pursued by the Mabden, many turning to neutrality, forgetting how to access the many worlds (those who remember are called Ghost People by those who have forgotten) or even Chaos.
In the process of scattering, a contingent of Eldren becomes embroiled in political conflicts in a nexus of 6 worlds and John Daker (Eternal Champion who is cursed to remember) incarnates as Prince Flamadin, and with anti-Nazi German army officer Ulrich Von Bek, Count of Saxony, saves the day. Ulrich marries the Ghost Warrior Alisaard, despite it being clear that Eldren and humans cannot interbreed, reinforced by Erenkose, Elric and Corum's inability to sire children with their versions of the Eternal Consort. Ulrich finds the Holy Grail, the key to the mutliverse which his ancestral namesake (also the Eternal Champion) was sworn to protect by Lucifer.
The descendants of Ulrich and Alisaard migrate to a world where they are sworn to the powers of Chaos, these people who become the Melnibonéans will eventually also mate with dragons according to their own stories.
These people are led by leaders who are really their future emperors dreaming/living separate lives to prepare themselves. Elric while doing dream quests lives out multiple lives in the Von Bek family, such as Count Ulrich Rudric Renark Otto von Bek-Krasny, the main villain from the Simon Begg detective novels that Moorcock took over and rewrote into his own mythos, >>76884440.

Elric will eventually fight Roland as part of trying to remake the world after the destruction it and the hands of Chaos and die in the final act. Before that on his adventures, he meets Oone the Dream-Thief and has a brief fling. Despite that Eldren and humans not being compatible, as seen by the sterile half-Melnibonéans slave class, but also countered by the fact Melnibonéans have humanish eyes. Oona has twins, Onric and Oona; who marries Ulric Von Bek, who is an anti-Nazi German and Elric on a dream quest It's also revealed that Elric fathered the Von Bek family on another dream quest so retrospectively gave the family a history of albinoism, which manifests in the people Elric manifests as. Ulric and Oona have an adopted, perfectly normal granddaughter named Oonagh.
Oona has adventures in fantasy North-America, with Ayanawatta (Hiawatha), White Crow (Elric on his first dream quest), Ulric and Elric (who is strapped to the mast in Stormbringer and on a dream quest).
This all leads to a big (if rushed adventure where Oonagh has to rescue a boy named Onric (calls himself Jack D’acre) from a big multiverse battle called the Conjunction of the Sphere, which is basically where every Eternal Champion book series ends up in the end and where Erenkose died saving Talernon the eternal city and destroying the Eternal Balance, mostly to rid himself (as John) of having to relive past incarnations.
In an alternative Granbretan where Hawkmoon is on the verge of failing, everything collides in a ritual and the day is saved. Oonagh and Onric begin a relationship (thanks to dimensional stuff they are only 6 years apart), Onric changes his name to John Daker, becomes a stockbroker and later start suffering bad dream of being the Eternal Champion.

I've only ever listened to one book about Elric. I enjoyed it and had a good laugh at one part. I think it's Sailor on the Seas of fate. But one of the other champions is talking about how he was captured by a race of blue skinned hermaphrodites who were confused by his lack of vagina and skin color. So he explains he had to run naked through a swamp to escape them before they painted him blue and basically gave him gender reassignment surgery.
