And the rest is covered in heavy fabric/leather or mail, the plates are a bonus I say, for puncturing atacks than the mail will not protect that well, remember than the lungs, the heart and the of course the head are the most important parts, perhaps some more protection to the groin or guts, but with a horses you are golden with this suit I say.
Also you don't need to be covered completely in steel , nor be far all the warriors of antiquity were, to be protected or able to wage wars or skirmish. A half or three quarters armor are more than sufficient for your average knight/warrior like Sir Friendzone.

Also they did very well in the combat, specially the first season, in the series the Armour counts a lot.

The roll and keep d6 System is simple enough while being being 'logical'. The 18 ability stat seems like a lot but it really just covers what skills normally would do in a reasonable manner while the specialisation allows for a nice balanced character options.

Anyway I understand HBO's costume production. They want to make sure its a FANTASY series, featuring a FANTASY culture. HBO has been on the roll with Historical series prior and didn't want GoT to look like a Historical. Hard to convey that when you go full accurate + just add dragons and shit for fantasy elements.

Hell, GURM is fucking vague at what the armor & clothing really is like. I remember the "Arrakh" being depicted as a Nomad Saber in Cards but in the show its depicted as a scythe, all because GRRM just said "its a curved blade."

To be fair, the Tyrell seem to prefer looks over comfort. A lot of their armor and clothing is covered in thorns, tiny flowers and all sorts of details that would be a pain in the ass to clean and to move around in.
