What do you like to roleplay in a non erotic context?
What kind of sexual encounter do you find appealing in a fantasy sense - Elf and orc, human and dragoness, ectera.
Avoid self-inserts as an imitation of you as a person. To paraphrase the great guru Mami, who achieved moksha and release from the cycle of posting on the erp threads, it's not really fair when girls are bringing over kitsunes, kobold-girls, brown tribal girls, ageless elves, beautifully idealistically busty anime vixens, and the guy has average mcaverageson from averageville who looks like the male player with a few changes. Call it the Harem Anime complex.
Now someone is going to come in and say they are fine with 'slice of life average mcaverageson' characters - and that is true. Some people will be. But you can only blame yourself if the mundane character you composed can't get the attention of a more exciting character, or you lack much response to someone as vivid and erotically exciting as Tenchi or the sword art online twat or the typical anime protagonist.
Doesn't mean you have to be really out there. Just think of a creative angle, a niche. Maybe you're a catboy - you could be the usual cuddly neko catboy or a big bara style lion-neko. Maybe you're the dashing rogue type - that may be cliched, but there's a reason girls fawn over Flynn. Maybe you're a grizzled salty veteran so you can pull the older mentor sexual partner angle. Maybe you're a shota sorceror, or a half-feral man/boy raised by wolves and barely civilized.
Do not avoid self inserts in the sense of playing/immersing yourself in the character. Most fantasy literature or literature in general has protagonists who excite and interest us in some way - you probably wouldn't want to read a book of average mcaverageson the guy or girl who lives a perfectly average life. Even "Slice of Life" type animes or sitcoms depict a sort of idyllic, exciting existence.
