Can any Medfags help me out?

I got blood tests back that say I am positive for "Antinuclear Antibody - speckled pattern".

My doctor is incompetent and says he had no idea what it could be.

I have many health symptoms but it's literally not lupus.
What could it possibly be?

Antinuclear Antibody is a nice screening test that shows you more than likely do have some sort of autoimmune disease but it's not specific. A lot of the suggestions in this thread can explain your symptoms but your best bet would be to go to a rheum doc who can make a clearer diagnosis.

It just means you're positive for a marker associated with many auto immune states not specific for any one of them.

It also matters the degree to which the titer is positive. If it came back hugely positive that also means something may be going on.

It's usually used as a screening test for autoimmune diseases like Systemic Lupus Erythrmatosus. But it's not very specific for the disease. If you think it's Lupus, you should get confirmatory Anti-DNA/Anti-Smith Antibody test.

However it can honestly be a range of autoimmune diseases since it's a very sensitive test. You'd need additional testing. What are your symptoms?

I have to change what I eat & don't eat frequently and eat little amounts of different things constantly and it keeps it under control

Fix your gut microbiota. Don't ever take antibiotics unless you absolute need them.

Lactobacillus plantarum is a must and I recommed L. rhamnosus and L. reuteri as well. But best be safe and try getting as many different species as you can. Maybe around 20 probiotic species on the market in pill form.

It's not enough to eat them once unless you keep feeding them the correct fibers in order to keep their numbers up and their metabolism working. I'd suggest you get the fibers (like pectin from apples, rs from potatoes).

Autoimmune diseases (as well as allergies) are formed when your gut bacteria do not signal your gut to stay tight and food proteins enter wrong places causing your immune system to react to them. Some food proteins will be somewhat similar to some proteins that your body itself makes and this is where autoimmunity arises. Allergies would also be avoided if the food proteins stayed where they should have stayed, in your gut. But your gut doesn't work if the microbiota is all wrong or dead.

Gut microbiota as the source of autoimmune disease is largely overblown. They usually account for a small number of autoimmune diseases.
