How does one pronounce "Math"? Is it "Mats" or "Maff"? The people I meet with always pronounce it as one or the other.

The TH consonant is dental, meaning your tongue is against your front teeth.
F is labio-dental, meaning your front teeth are against your bottom lip. Very different.

Maths /might/ be pronounced mats with a plain T if said quickly. It's the UK/Commonwealth abbreviation, whereas math is the US abbreviation.

most ESL people can't make the sound unless they have a lot of practice. usually they substitute an "s" sound. math -> mass, smooth -> smooss, the -> see, etc.
