It depends on the topic I'm writing about. In general I use Mathpazo (Palatino) for files for other students and MinionPro for professors. Sometimes I might use Euler for the equations and Libertine as a temporary substitute for Mathpazo.
As for Computer Modern, unfortunately the font isn't really the best on a screen so if I don't have to write a document quickly I tend to avoid it.
