Well actually we are NOT able to make the same work with modern tech today because diamond discs and water cutters would only be able to make straight cuts in at least one dimension. But those ancient stones are shaped in a threedimensional unevenness and yet fit precisely. Laser cutters could do this but they would leave a burned/vitrified surface which the ancient stones in most part do not.

Funny thing is, you can rule out the following methods:
-Saws, because not straight enough, also cut out in three dimensions
-hammer and chizzel, lol noway
-lasers, no straight cuts no vitrification marks or melted stone
-stone melting liquid. Noway because you would see traces of that liquid and liquified stone streams.

For me it looks like if you would make cuts into soft clay with some sort of wire but even this would result in slightly different shapes.
