Anyone know some notepad software that
Shows plain text TeX when cursor is on the line,
but shows converted equation image when cursor is not on the line?

If you use Vim you can make it auto-compile on save, so you can just have the pdf document up next to the editor and see it update as you save. Just google it, I'm sure it can work w/ other editors too

Not really. If I really wanted to I could put the pdf on a different desktop and just switch to it when necessary, but I don't care because I actually like compiling and checking the pdf often to make sure formatting is right. I don't like reading text that spans the entire monitor anyway.

Not exactly what you want, but emacs shows you rendered equations when your cursor is out of them and source when you move inside them.
