I know it's basic but Cauchy's differentiation theorem is beautiful imo. It was like seeing the smarter and sleeker older sister of the fundamental theorem of calculus if that makes sense.

Mathematical "beauty" usually comes from an element of surprise ; when something you thought was complicated turns out to have a very simple explanation.
It also has to do with the feeling of seeing something from the right angle
