Because they figured they would gather all the data in that time, and after that the sensor wouldn't register anything new.
Keeping a mission active is very costly because it still must be managed from ground control. Using money on a mission that can no longer provide interesting data is the real grant extension. Also, less shit you put on a spacecraft is less shit that can brake, and less weight too.

Of course Mars has an atmosphere and they did use it to aerobrake.
The difficulty is that there is an almost ten minutes delay from Mars to Earth so the entire landing sequence must be preprogrammed into the landers AI, so even small deviations from the assumed circumstances (ie. the ground being a few meters higher than expected, the wind being slightly stronger or even a marsquake) could result in a critical failure.

Like ensuring we maintain our level of living and lifestyle without fucking up the environment (which will ruin our current way of life) ensuring maximum use of Earth. Only when max equilibrium is reached on Earth should we turn our attention to the solar system. Expansion and energy/resource needs will need to be balanced until we have nothing left but the sun and habitable space colonies around it. >for fuck sake, they literally tossed a coin and it landed ass up, no wonder it didn't deploy
No, it's a clamshell. As long as it landed on a reasonably flat spot, and the opening motor worked, it wouldn't matter which face would be down.

The reason it failed is that it needed multiple successful deployment operations which each could block all the following ones.

The mission could have limped along with one less solar panel, but as they designed it, its failure to deploy meant they couldn't do anything with it at all, because the antenna was covered up.

It was a very naive, amateurish design. Engineering by scientists. All of the fanciest high-tech custom gear they could pack in, and the only way to communicate with it blocked by five big lids that all had to open in sequence after the thing has been dropped from a height on an alien planet.

See, that's not thinking like an engineer. Engineers know the stuff you build will fuck you every time you give it a chance.

To "engineer it robust enough that it WILL work", there's no substitute for field testing, which just wasn't an option. Adding mass to make it robust wasn't an option either.
