There haven't been thousands of atmospheric detonations, and they weren't at the same time/in close proximity

There have been about 2000 nuclear tests conducted over the span of 70 years.
There are currently 15,000 nuclear weapons on the planet.
If all 15,000 of them were to be detonated within the span of, say, three days, it would be an entirely different scenario than the nuclear tests.

Nuclear winter is caused not by the bombs themselves but by the bust and smoke produced by nuclear war.

If you destroy hundreds of cities the resulting air pollution would block out the sun and cause cooling.

If you bomb empty dessert you don't burn enough flammable material to cause the same effect.

However, it is important to remember that while many nuclear tests took place in the desert if you are patrolling the Mohave you will almost with for a nuclear winter
