What contributions will I make towards society by getting a degree in Mathematics over, say, a degree in ChemE? Also, how's the pay?

Sorry dude but Philosophy is the foundation of mathematics and the rest of science. It tackled the ideas of argument, logic and logical fallacies and formed the framework of math and all science that use math. I think all scientists, mathematicians and engineers should be require at least one maybe two philosophy course to under stand how to think independently of the conventional wisdom.

You can become insanely rich becoming an actuary after getting a math PhD, but very few people do that. You are usually autistic if you have a math PhD and would rather do "math research".

Engineering is a cool job and makes great money.
