Depends on if they are of similar size and function. Assuming profit margins are the same, if size is equal then product 2 pulls in more customers since it is a hotter selling item. If product one is less than twice as large, however, it could free up inventory space for additional profitable items, which could be beneficial. my answer is "not enough information".

Need mo info. Each product would have its own associated overhead regarding handling, storage volume, stock taking. In theory, less items sold is less time and effort spent selling them. I'm going with Product 1

Both for a number of psych reasons, particularly if they are roughly the same function. The illusion of choice will increase cheapskates feeling like they got a deal on a less expensive product, and people that splurge will feel their purchase superior to the cheap version.

Demand would likely increase for both (though you'd have to figure a new balance as there is overlap)
