I just finished the CodeAcademy course on python, but I have no idea how I can make it useful. Where do I go from here?
Eventually, I want to be able to write a python program that can take a sound input, find the FFT, and then associate that transform with a text representation of the sound, e.g., associating the FFT of "apple" as a sound with the string "apple."

Not sure what books/resources might be useful, but CodeAcademy doesn't really teach much. Try some easy projects/problems then find a book on what you need. Project Euler is good for getting your hands dirty but you're gonna need object oriented experience it sounds like.

I would check out "Learning Python the Hard Way" by Zed Shaw ebook to make sure that you have at least some exposure to python programming concepts. Once you've mastered this book, you should read "Learning Python 5th Edition" by Mark Lutz to get the full apparatus of the programming languages' essence.

for this i guess you need lots of dummy people (voices) and knowledge on machine learning

numpy or scipy will probably be your friends. they are good for computations. other than that, I can't say I got much advice to give. I'm much more into octave/Matlab right now, but probably should learn to get good at python as well as I see it's getting more and more popular.

Do the first stuff you think about, even if is something not useful, eventually you'll realize what kind of program will be useful and you'll develop the idea. Nobody comes up with a useful idea just after learning a programming language.
