Okay so what's a suitable study curriculum for somebody (me) who has a grade-school understanding of mathematics?
To give you an idea, I do not know how to properly use the standard multiplication algorithm and I have absolutely no experience with proofs, geometric or otherwise.
My arithmetic skills are severely lacking as well and in need of some serious drilling.
I'm hitting khan academy like no tomorrow.

Before doing anything, try getting a holistic view of elementary mathematics. While you can learn any subject by jumping in, there are obviously better routes. Start with the basics of algebra, visit geometry, then visit a discrete mathematics or calculus textbook depending on where you're hoping to end up (mastering proofs or learning about mathematics that are applicable to continuous systems).

Start with khan academy, unit 1, lesson 1, there are videos with every section and exercises until you are proficient. I was home schooled and never learned proper math, as an adult I sat down and taught myself addition to trig over 3 years and now I in in calc 4. I suspect have a learning disability so it might not take you as long but you can do it if you are committed and you practice every day.

I can't calculate tips in my head, I can barely do math by hand, and I have almost no experience with proofs. I have almost forgotten all the math I have learned.

But now I'm doing a PhD and teaching a college class. I don't know how I actually got this far. Feels bad man.

Speaking of Khan Academy, they have a large amount of courses, but how advanced are their courses? How many fields of mathematics are there that are not offered on Khan?

not that advanced really. first year maybe second year college.
