I'll take a wild guess and say there's no single field devoted to this, but I assume a company developing this kind of technology will want mostly people in CS, math, and physics.
I'd take a look at SIGGRAPH, that's where all the top shelf animation technology developers are.

Blender, 3ds max, Maya, XSI, Houdini are the industry standards. Blender is an open source alternative but not as good as the others. The typical workflow depends on the objective, for movies or grames for example it's a mix between frame-by-frame animation, automated animation through scripts like in OP's video (which create "muscle"/joint connections and simulate physics interactions), and MOCAP. Any of these programs I mentioned are scalable, that means you can develop your own scripts / plugins to automate something. Bear in mind though that each of them have their own programming languages so they are not interchangeable.
if your interested you can start by doing something simple, say programming a bouncing ball, or maybe just a linear animation if you can't do that at first.
