You can make huge sums of money. Also a lot of PhDs in math/cs/physics are quants.

work for a bank

work for a private research foundation or think tank

honestly if you are smart about it and make an effort to prepare for useful work and dont just take shit you are interested in you can find a job working in research in most fields, there are not that many jobs as they are fairly niche and their role is not immediately obvious but then there are not that many math phds either

also, pretty sure a cs phd can find a job as a higher level programmer

this. Coders with a decent mathematical background are rare and sought after. Our university had a series of talks concerning possible careers in computer science. There were quite a few mathematicians. One Italian dude worked with the petrochemical industry designing models for fault detection in their processing plants.
Also OP, every job search engine let's you specify what fields you are interested in, ever tried looking for - you know - jobs in mathematics?
