I'm going to assume OP means "kinks," because actual fetishes as a psychologist would describe them are definitely in the category of mental disorders. It's only really a fetish if there's an intense psychological need for it. When someone literally can't get their rocks off without X, then it's safe to say they have a fetish for X.

It's a result of increased mental capacity. Because the benefit of that capacity has afforded us the reduction of certain selection pressures. A kink is where someone can jack off to something considered 'strange' but it isn't necessary. A fetish is when it is absolutely necessary to get off. The difference is summed like so: "A kink is when you use a feather, a perversion is when you use the whole goddamned bird.

Now, a kink/fetish is caused by the early childhood association of an object or situation with sexual pleasure. Usually it starts out as something general, e.g. soft, fluffy things. However, over time, the fantasy gradually gets more narrow and specific. What used to be a fetish for soft objects turned into a fetish for fur. This also explains, for example, why people who kill for pleasure gradually get more and more deviant; their fantasy evolves and gets increasingly complex, to the point where it eventually becomes impossible and so they continue until stopped by force.

Or, of course, you can just go with the Freudian approach and say its your mother's fault. Problem solved.
