i.e. have something happen or them watch a video or something then see how much you can alter their memory of the event by speaking to them about it.

That has nothing to do with predictability, the amount of times you can move and to which direction is controlled by him, when he gets to tell me how many times to move he can do the maths and say a number that if i move that many times the chances of me getting to that paper he takes off is zero.
