Why can I write down the laws of the universe onto a blackboard?

How is it that the laws that govern the workings of the entire universe are so simple that they are comprehensible to a species of dumb apes that still spend most of their day eating, sleeping, procrastinating, having sex, and chasing other frivolous whims?

Protip: you can't (yet) write down the "laws of the universe", just convenient models with varying degrees of verisimilitude.

We can write down pretty damn accurately how everything works.
