How come math and science doesn't interest most people? What's it like for people who actually enjoy dumping hours of their free time into this and make it their hobbies, career, and life?

I don't mean this sarcastically either, I'm genuinely curious what an academically driven mind looks like.

If maths was just doing fun maths problems rather than piling on maths knowledge then maybe more people would do it.

maths in schools is all about doing formulaic crap. Only good teachers who are working with a class of well-behaved, capable students actually invite people to investigate interesting problems and apply their knowledge in novel ways.

I think there should be a big shift in maths towards being good at problem solving instead of just teaching knowledge.
the kind of questions you get in maths competitions, where the knowledge needed is low-level, but hte questions are still tricky and non-standard should become a main part of the curriculum, not just something that studnets do a couple of times in their highschool careers when they're made to sit olympiad preliminary tests.

Maths is about a test of strenght.
