If someone was screaming at me and I theoretically screamed back at them with all the exact same frequencies and amplitudes at perfect times would the waves cancel each other out and we would both be silent?

It would create a standing wave.

That isn't a wave with constant zero amplitude, there will be nodes and in between it will oscillate to twice as loud.

However, if your ear was positioned at exactly one of the nodes, then yes you would not hear anything.
