how much is randomness a factor in evolution?

are initial state and environment the most important variables?

why are there different species within the same environment e.g. i can understand fish being different from us because they evolved for water, but why did birds become birds and us humans?

There is no chance in evolution. Mutation is by chance, then evolution happens, by if they die or pass on the genes.
