Ears must be placed opposite eachother for better hearing. It is better to not have the ears aim in the same direction as the eyes, this coveres more ground.

The nose, eyes, and mouth are arranged on the face in order of input/output increasing activity. You have the mouth the lowest, because it gets the most intake/outtake, then the nose, then the eyes (only intake is light).

If you arranged them any differently you would get tons of incidents (throw-up/snot in the eyes, snot in the mouth, etc).

Note: this only applies to the majority of land-animals. Sea-creatures wouldn't have to worry as much about snot dripping into there eyes, so the arrangements can be slightly different.
