Once you're out of a relationship you may be trying a bit more or flirting a bit more and she knows she could have you whenever.

I expect that our idea of a suitable mate is heavily influenced by society. That is, part of how attractive you find a mate depends on how attractive you think others would find that mate. As a consequence, a 'taken' man has an obvious positive vote in the suitable mate category.
