We don't differentiate between organic and inorganic matter.

We simply divided chemistry into those two divisions as the models are significantly different that it is easiero to have two than to add thousands of exceptions to one or the other.

less than 200 years ago we thought caloric was a real substance, whatever happened to the ether theory? we changed our minds about how the world worked, just like our ancestors slowly began to realize that the mountain rocks falling in the hills were just rocks and didn't have intent of their own

sure, the idea of organic/inorganic can be used to differentiate between the generalities of the science as a whole, but noone classifies matter itself as organic or inorganic

you may as well say there's a division between gases and liquids, the only difference is pressure.

The division is there purely because carbon demonstrates a higher tendency to caternate than other elements, this leads to behavior that is studied as organic chemistry because there is more to look at there than there is in the rest of chemistry.

And you know the reason we have the division in the first place, all the way back when we didn't know about the interchangable nature of matter
