better to study something mysterious, like consciousness or string theory

if you want to make a living avoid the theoretical sciences and do anything applied; applied math, comp sci, engineering, finance, etc

Well op I can tell you multiple things

I am doing chemistry right now
in both the sense that i am a chem/phys major/minor
and in the sense that i just cranked out a load of anal lab.

I can also tell you that right now there are jobs
and that chemistry is considerably more fun than say physics (i know minoring in it yada yada)

I can also tell you that friends of mine of the senior persuasion and of a chem degree (or biochem/molecbio) are all off to grad school or have jobs secured.

So clearly shit can be done with such a degree

also o-chem is fun as hell, so regardless of major minor in chem so you can take that
