If someone snaps their fingers beside your left ear, the sound hits your left ear before it hits your right ear since the right ear is farther away, but you only hear one snap.

Uh, yes. This is why you can tell where sounds are coming from. It hits one ear before the other, and your brain has learned how to associate those small delays with direction. Up/down and front/back still have some differences because of how your ears are shaped.

It's not a camera feed, to say the least. There's all kinds of sources of noise and shit that get completely thrown away, holes that get patched, etc. Your vision centers have learned to make sense of what's coming out of your eye and to patch up the holes. Like how you don't generally see the veins on your retina, or the blind spot. Have you done any of that stuff about finding your blind spot?

There are cells in your visual cortex that are specially keyed to detect edges oriented in a certain direction, motion in a certain direction, etc. Lemme try to find some good sources of stuff I've seen before on this.

I didn't find the whole documentary yet, and it's just one of many things I've run into (sorry I don't have the links).

The color illusions (like they do about a minute or two in) are a big part of this. If your eyes were just cameras and your brain just looked at the input without heavily altering it, they wouldn't be possible.
