Hey dude, imagine a big magnet ball, everything is attracted by the ball in all directions, up , down, left, right, front and back, the if you could stand in this ball, then up would be far from the ball, and not the really up way.
The science use maps with the North Pole to the up side because they wanted to, they could use the South Pole, or even use your house has the point that could be considered the highest point, but this only changes something in the maps, not in real life, nothing act different if they use a different point has reference
