I wouldn't say energy is "spent travelling along the side of the beaker." If anything, the water gaining kinetic energy and loosing potential.

Rather, the forces holding the water to the surface of the glass is greater than the weight of the water due to gravity. It's all about the angle that you tilt the glass. It'll make a mess when the water can not break it bond with the glass from it's own weight. Tilt it at a greater angle, and it will.

Whether it trickles down the side or not is based on at least the following factors:

Angle of glass (changes horizontal component of gravity which points in the opposite direction of fluid flow down the side)

Speed glass is tipped at (causes fluid to move in opposite direction of trickle, causing more force to be needed to move it in the opposite direction)
Also: try-at home experiment:

Get a glass and pour it at angle so that water trickles down the side.

Add salt until supersaturated
