How much are you actually expect to know for an entry level engineering job?

I mean, I've done decently in most of my classes, but to be completely honest the only thing that I retained long term are my programming/MATLAB classes.

You're expected to know everything for less than minimum wage, of course. But as long as you can pass math-intensive college courses, you'll do fine.
