If we send the hubble telescope thousands of light years away and point it towards earth, will we be able to see 1000 years into the past?

Theoretically yes but you wouldn't see the data for 1000 years.

The telescope would take 1000 years at lightspeed to get there so no... no we wouldn't

It would take the telescope 1,000 years to get there at the fastest speed allowed by physics, then it will take another 1,000 to receive the data. It wouldn't be worth the effort.
