Why do people like doctors and engineers on average make much more money than people who are clearly more intelligent and talented? Like physicists and chemists.

Because scientists and stuff don't do anything more than pursue intelligent hobbies.
There's not enough demand for the stuff they do.
They are only really good for teaching people to apply their knowledge, or for research which can further be taught to be applied.
Even just a couple hundred years ago, all the chemists/physicists/mathematicians were either:
1. People so rich that they had nothing else to do or the money to buy books and study all day because they didn't have to work (Cavendish, Newton)
2. So poor but smart that they had nothing to do but study (George Green, Ramanujan)

In either case, BEING a scientist made them no money at all. And why should it? Who do you expect to get money from for doing science?

Grad school determines if people are capable of contributing good, original research to their field, whereas undergrad studies determines not much other than the ability to read some books and learn.

I'm a chemical engineer. I learn pretty much all the chemistry chemistry majors learn, minus Achem and some of the more advanced reactions in Ochem. While it would be easy for me to pick up a book and learn more complicated reaction mechanisms if I wanted to, most chemists have zero experience in process control or development, or industry scale-ups.. What I'm saying is that it is easier for a chemE to become a chemist than it is for a chemist to become a chemE

I would generally agree with this.

Assuming the engineer is competent and didn't get through college by simply memorizing, it wouldn't hard for an engineer to become as knowledgeable as a scientist in his/her field of engineering. This is especially evident in the professors of engineering courses in engineering universities. There's a lot of professors in my university that did engineering in undergrad and switched to something like physics or chemistry in grad.

I'm not sure if the same can be said about scientists.

Engineers make a lot of money because their studies are actually applicable, same for Computer Scientists. A mathematics major has more potential to be successful on wall street--yet instead it is filled with finance and applied economics majors because their work is actually applicable.

Engineering has a more immediate impact on society than science.

There are scientists making more than doctors or engineers, but they typically are in corporate research positions or running their own companies. Most scientists are not motivated strictly by money or the ease of coming into it (they would have chosen engineering if both of those factors came into play)

So, no one has thought to mention the insurance policies that medical professional need?
To put it simply, it's a bit more than your car insurance.
Most engineers don't need such types of insurance, due to typically being part of a team and thus not individually responsible for something that may fail. Though I will add, they do have expenses of their own. Some professional programs costing several thousand a year to use, which typically gets added to their pay as a business expense, but is money they're not really making.
