/sci/ how long would it take 3 alcoholic beverages, one made from untreated honey, one from cooked grains, and the last from yeast bearing fruits, to ferment?

Gotta do an experiment in ancient technology for an experimental archaeology class, and I've only got 4.5 weeks left to do the assignment. Trying to work out if it is feasible to attempt to ferment alcohol in that time
