Hello /sci/

I was cooking just now and I started wondering, why does butter turn bad rather quickly even though it's refrigerated but vegetable oils are fine for a long time even at room temperature?

butter has dairy
dairy spoils like a motherfucker

vegetable oils... are just that. oils.
oils take quite a bit longer to degrade.

Melt the butter and make it into ghee. Pour it into mason jars, seal tight.

I have tons of the stuff, and the texture on it is so much more enjoyable than butter, even though it's technically the same-- just without the precipitates.

ive kept butter in my fridge for months. it goes hard but not bad. perhaps your fridge isn't cold enough

Not quick when compared other foodstuffs, but I'd say it takes weeks, not months. But oil seems to be fine for ridiculously long times.

Well, it's also fermented... so it contains quite a bit of bacteria.
