The mass of objects can be determined by gravity.
The radioactivity of an object (galaxy-star-planet ect.) can be determined by a radio-telescope.
The interior can be determined by what is on the exterior, and the mass of the object.
So you now know what it is made out of and the mass of it. You can figure out an approximate density from the size of it.
I don't know what technique they used, I'm sure they use what I said, along with many of other things.
Just because you don't personally know something doesn't mean no one knows it.
