What the hell kind of transformer is T1? I've searched everywhere and I can not figure it out. Any help?

It's called a "wind-it-yourself" transformer :P

Seriously, most multi-tap transformers (such as this one) are custom wound for each application. Even most basic two-coil transformers are custom made since each application needs a very specific design. If you needed a large volume, such as for use in a product you were manufacturing, there are a large number of manufacturers that can manufacture custom transformers.

You can make your own transformers. Just make sure you know what you're doing, look up the proper construction techniques, avoid making dangerous ones which arc and catch fire, etc :)

Are you kidding me? No manufacturer stocks multi-tap transformers with the kind of ratios you would want for the circuit shown here. The only options are:

1) Order a custom transformer from a transformer manufacturer (i.e. costs an arm and a leg)

2) Make it yourself, it's not that hard.

Also, the transformers are going to be a bitch to make (especially T2) because they need very high voltage isolation.
