If the Earth was flat then gravity would either be uniform or it would be stronger in the "middle" if it was like OP's pic. Gravity is slightly stronger at the poles than the equate due to the shape of the Earth.

1) the shadow of the Earth on the Moon in a lunar eclipse is always a segment of a circle. The only shape whose shadow is always circular is a sphere.
2) as you travel north the pole star rises higher in the sky, as you travel south it sinks lower. This at least proves a cylindrical shape.
3) as ships sail off in the distance, no only do they appear to shrink, as expected, but the hull disappears before the mast and sails, proving some sort of curvature.

You can have a multi-layered plane for example, if a planet during its cooling period had spun so fast that it continued on from being merely pear-shaped (as we have now for lack of speed) to something almost disk-like.
