So, I'm eating dinner with my chem major and math major friends, and I bring up the whole ".999... = 1" thing to blow their mind.

Holy shit, there has never been so much RAGE in my friend group. I kept showing them the various proofs, and literally all they could produce was "NO." I explained how there's no number between .999... and 1 at one point, and my friend literally put his hand on me and said "SINCE THERE'S NOTHING BETWEEN US WE'RE THE SAME, RIGHT?!" I've never laughed so hard at a serious debate point ever.

She really didn't, which was made it so bizarre. She was almost yelling about limits within an instant, so I showed her the proof that uses limits and then she totally dismissed it. It was quite bizarre.

Yea dude, limits just say that it approaches one. lim x-> inf (1/x) = 0. same sort of thing. It conceptually reaches one at infinity, but as you can never reach infinity, it will never be the same.
