Can you please explain this for me:

1)I go to bed
2)Suddenly have to poo but decide that it can wait until tomorrow
3)Wake up really thirsty in the morning and don't have to poo anymore

You misread, he says he's really thirst in the morning, meaning that the water reabsorbed was not adequate to completely rehydrate him.

You expire a relatively large amount of water during the night.
You don't have to poo as much because your colon is quiescent (it calms down, doesn't do the big peristaltic surges) while you sleep. And of course you absorb some water from the poo (less than you breath into the air with your moist ass breath though).
