I have always noticed a change in the taste of food for a very long time now, different and more...less flavorful than a longer time ago. Am I wrong/ is it me just getting older? TL;DR food tastes different than a decade ago.

Probably some of both. Production and ingredients have changed in many foods over the last decade, sometimes to reduce fat/sugar/salt content for people concerned about health, sometimes just to save money. A human's sense of taste also changes over time.
